A Healthy Spring Recipe To Try

Smoked salmon & pea frittata served with rocket and avocado salad

(Definition: a frittata is a form of omelette, in which vegetables or cheese or other fillings are mixed into the eggs and cooked together)

This serves 2 - double the ingredients for 4 people

 

Ingredients

    250 grams of potatoes

    100 grams of smoked salmon

    4 free range eggs

    1 tablespoon chopped dill

    50 grams of peas

 

Directions

Clean, peel and slice the potatoes, cut them horizontally into medium thick flat slices.  Place into boiling water and cook until tender - usually between 12 to 15 minutes. Drain these potatoes when they are cooked but still firm.

Cut the salmon into approx. 2cm x 2cm pieces. Chop the dill. Crack the eggs into a bowl and beat with a fork until the mixture is slightly foamy. Add the salmon and dill, peas and add a little salt and pepper to taste. Then add the potato slices.

Heat up 1.5 tablespoons of olive oil in a large frying pan on a gentle medium heat. When the oil is warm, pour in the mixture from above and cook for 8 to 10 minutes. After this time, put a large plate on top of the frittata and turn the frying pan over so that the frittata ends up on the plate.

Now carefully slide the frittata from the plate back into the frying pan. Continue to cook it until for approximately another 5 mins.

When the frittata has a nice golden brown outer layer, remove it, the cut and serve. Some rocket salad, cherry tomatoes and a little dressing make for a great side dish with the frittata.

This meal is packed with protein and has relatively low fat content. It is delicious and quick to make.
